Cheddar Grilled Cheese with Pimento Mayonnaise and Spinach
Ingredients
•
1 teaspoon neutral tasting oil
•
1 cup tightly packed baby spinach
•
Dash sea salt and pepper
•
1 teaspoon lemon juice
•
¼ cup vegan mayonnaise
•
2 tablespoons pimentos, finely chopped
•
1 teaspoon lemon juice
•
Dash sea salt
•
Dash finely ground black pepper
•
2 slices GO Veggie! Dairy Free Cheddar Slices
•
4 large slices organic white or whole wheat bread
•
1-2 teaspoons vegan buttery spread
Instructions
Step 1:
Heat a small sauté pan over medium heat.
Step 2:
Add oil and add spinach and dash sea salt, pepper and lemon juice. Cook until spinach is wilted, about 30 seconds to 1 minute. Set aside.
Step 3:
To make pimento mayonnaise, in a mixing bowl combine vegan mayonnaise, pimentos, lemon juice, sea salt and pepper. Set aside.
Step 4:
Heat a flat pan or griddle over medium heat and add 1-2 teaspoons buttery spread.
Step 5:
Add all 4 slices of bread to pan.
Step 6:
Add about 2 teaspoons pimento mayonnaise to each piece bread.
Step 7:
Top 2 slices of bread with a GO Veggie! Cheddar Slice and top with sautéed spinach.
Step 8:
Enclose with remaining bread. Grill for 3 minutes.
Step 9:
Flip over and continue to cook for 2 minutes or until golden and cheese is melted.
